In a medium\nsaucepan heat the olive oil over low flame. <\/p>\n\n\n\n<p>2.) Thinly slice\nthe garlic cloves. <\/p>\n\n\n\n<p>3.) Add the onion\nto the oil and season lightly with salt. Saut\u00e9 the onion for 1-2 minutes until\ntranslucent but not brown. Add the garlic and cook 1 minute longer. <\/p>\n\n\n\n<p>4.) Add the\noregano, chile flakes, and basil and reduce the heat to very low. Cook,\nstirring often, for 8-10 minutes or until the garlic becomes slightly toasted\nbut not deep brown. <\/p>\n\n\n\n<p>5.) Meanwhile,\ncrush the canned tomatoes by hand in a bowl. Add the tomatoes to the pan and\nbring to a gentle simmer. Season with salt and reduce the heat to low.<\/p>\n\n\n\n<p>6.) Cook the\nsauce 15-20 minutes. <\/p>\n\n\n\n<p><strong>To make the Gnocchi: <\/strong><\/p>\n\n\n\n<p>7.) In a medium\nsized mixing bowl add the ricotta, egg, 4 oz AP flour, and a pinch of kosher\nsalt. Mix all ingredients together with a wooden spoon. <\/p>\n\n\n\n<p>8.) Gently knead\nthe mix together to form a dough ball. Sprinkle some of the additional AP flour\nonto your work surface. <\/p>\n\n\n\n<p>9.) Turn the\ndough out onto the floured work surface. Cut the dough into three equal pieces.\nWorking with one piece at a time, roll the dough out into a long rope about 3\/4\ninch thick. <\/p>\n\n\n\n<p>10.) Cut the rope\ninto 1\/2-inch-long dumplings. <\/p>\n\n\n\n<p>11.) Using your\nthumb, gently roll each dumpling across a gnocchi board or the back of a fork. <\/p>\n\n\n\n<p>12.) Dust a\nbaking tray with the semolina flour and gently transfer the gnocchi to the\ntray. Repeat the process with the other two dough pieces. <\/p>\n\n\n\n<p>13.) Cook the\ngnocchi in salted boiling water for about two minutes or until they all float\nto the surface.
