1 PoundGround pork
1 TablespoonCooking oil
3Garlic cloves, minced
1 TablespoonFresh ginger, grated
3Green onions, thinly sliced
1 CupShitake mushrooms, finely chopped
2 TablespoonsSoy sauce
1 TablespoonGochujang (Korean chili paste)
1 TablespoonRice vinegar
2 TeaspoonSesame oil
1 TeaspoonHoney or brown sugar

Ingredients (Serving)

1-2 HeadsButter lettuce or bibb lettuce, leaves seperated
1/2 CupKimchi, thinly sliced radish, or pickled onions
1/2 CupThinly sliced cucumber
2 TablespoonsToasted sesame seeds
OptionalKimchi, thinkly sliced radish, or pickled onions

Ingredients (Sesame Sauce)

2 TablespoonsSoy sauce
1 TablespoonSesame oil
1 TeaspoonHoney
1 TeaspoonRice vinegar
1/2 TeaspoonGrated ginger

Instructions

  1. Heat oil in a skillet over medium heat. Add garlic and ginger, sautéing until fragrant, about 30 seconds.
  2. Add ground meat and cook until lightly browned, breaking it apart with a spoon.
  3. Stir in mushrooms, soy sauce, gochujang, rice vinegar, sesame oil, and honey. Cook 3–4 minutes until glossy and well combined.
  4. Stir in green onions and remove from heat.
  5. Spoon the warm filling into crisp lettuce cups and top with carrots, cucumber, sesame seeds, and any optional garnishes. Drizzle with sesame sauce and enjoy!
