At Frank Family Vineyards, the journey of our Cabernet Sauvignon begins long before the wine reaches your glass. From vineyard to barrel, every step is guided by patience, intention, and respect for the fruit. For approximately 20 to 22 months, our Cabernet rests in carefully selected 100% French oak barrels—a slow, deliberate process that softens tannins, builds structure, and deepens aromatic complexity. The barrel is not simply a container, but an active partner in shaping the wine’s character.

The Craft of Cooperage and French Oak Barrels

Cooperage—the craft of barrel-making—blends centuries-old tradition with modern precision. Our long-standing relationships with French coopers ensure consistency, quality, and a shared commitment to excellence. Each barrel begins as thoughtfully sourced oak, air-dried for months to mellow harsh tannins and enhance the wood’s natural flavor profile. Skilled coopers then handcraft, bend, and toast the staves over open flame, relying on experience and intuition honed over decades.

Framing the Fruit: Oak’s Role in Frank Family Cabernet

For our Cabernet Sauvignon, Senior Winemaker and General Manager Todd Graff selects barrels with a medium-plus toast. This toast level gently transforms the oak’s natural compounds into subtle notes of dark chocolate, cassis, espresso, and warm spice—enhancing the wine without overshadowing the fruit. “I choose medium-plus toast because it gives us the best of both worlds,” Todd notes. “It frames the wine beautifully while allowing the purity of our fruit to stay front and center.”

Balance remains at the heart of Frank Family Cabernet. Our Napa Valley Cabernet Sauvignon is aged in approximately 33% new oak, adding refinement and depth, while our Reserve Cabernet sees closer to 50% new oak to support greater concentration, richness, and ageability. This thoughtful balance ensures each wine expresses both power and elegance, while remaining true to its vineyard origins.

Beyond flavor, the barrel also shapes texture and mouthfeel. Through slow, controlled oxygen exposure, oak helps soften tannins, stabilize color, and encourage aromatic development. This gentle evolution allows vineyard character to take center stage—a guiding principle of Todd Graff’s winemaking philosophy.
