Our Greek Yogurt Chocolate Mousse Cake is a delightful blend of rich, velvety chocolate and the creamy tang of Greek yogurt, resulting in a treat that is both elegant and satisfying. This silky, creamy, and bittersweet chocolate mousse cake pairs wonderfully with a wine that boasts a fuller body, robust aromas, and vibrant notes of fruit and chocolate. Ingredients: For Crust

1 cupWalnuts
1/2 cupUnsweetened coconut flakes
1 1/2 cupsPitted packed dates
1/2 cupCacao powder
PinchFlaky sea salt

Ingredients: For Mousse

1 cupHeavy Cream
1 1/2 cupsPlain whole milk Greek yogurt
1/2 cupCacao powder
1-2 tbspHoney
2 tspVanilla

Instructions: Crust

  1. In a food processor, combine the walnuts, coconut, dates, cacao powder, and a pinch of salt.
  2. Pulse until finely ground and the mix forms a ball, about 5 minutes.
  3. Press the mixture into the bottom of an 8-9-inch spring form pan, making sure to pack it in tightly.

Instructions: Mousse

  1. Add the heavy cream to the bowl of a stand mixer fitted with the whisk attachment or use a handheld mixer. Whisk the cream until stiff peaks form. Using a spatula, gently fold the Greek yogurt into the whipped cream. Add the cacao powder, honey, and vanilla and stir until combined and creamy.
  2. Spread the mousse evenly over the crust. Cover and place in the fridge for 1 1/2 hours.
  3. In a microwave-safe bowl, combine the coconut milk and dark chocolate. Microwave for 30-second intervals, stirring after each until melted and smooth. Let cool for five minutes, then pour the ganache over the top of the mouse.
  4. Sprinkle with pistachios, more walnuts, or dried flowers. Chill 30 minutes or until ready to serve.
  5. Run a knife around the inside of the spring form pan and then release the cake from the pan. Slice and serve alongside a glass of Frank Family’s Napa Valley Zinfandel!
